Large rocks in a vineyard do indeed hold warmth.
And perhaps they'll keep the temp. up slightly in the evening.

However...

Grape plants produce sugar via photosynthesis.
Photosynthesis requires sunlight.
The grapes do not continue to ripen after sunset, regardless of temp.</description>
