Top Chef Delivers Modern Chinese Cuisine to the OC

Born and raised in Beijing China, Shirley Chung was exposed to the world of true cuisine at an early age by her grandmother, Liang Si Yi, former Director of The Red Cross in China. Emigrating to the U.S. at age 17, Shirley obtained a business degree as a prelude to embarking on a position in the family trade in the Silicon Valley. However, Shirley had other desires, and instead decided to follow her passion for food and enrolled in culinary school.

Trained in classic French and Italian cuisine, Shirley has worked and opened restaurants for Thomas Keller, Guy Savoy and Mario Batali. After she opened CarneVino as Chef de Cuisine for the Batali group, CarneVino earned multiple international awards for Best Steak House. She has appeared on Top Chef, and was the Executive Chef for China Poblano by Jose Andres. China Poblano was nominated for a James Beard Award as the Best New Restaurant in 2011.

Shirley loves to travel, feeling she learns about local cultures through their regional foods. She draws inspiration from all the places she has visited and from the favors of her childhood memories. She is scheduled to open her first restaurant in a somewhat surprising place – Orange County, CA. “Restaurant Twenty Eight” will be her homage to “Modern Chinese” food, and is slated to open in December 2014.

Meet Soliste Cellars – with Claude Koeberle

Claude Koeberle is quite a fascinating study and has been called a “force of nature.” He is opinionated (“Many of California’s fruit-forward wines do not pair well with food”), devoted to Pinot Noir with religious fervor (“Cabernet Sauvignon is an evil weed”), and talkative. He could impress you with his culinary accomplishments (Apprenticed under Paul Bocuse and Alain Chappell, became the youngest 3 Star Michelin Chef in Paris, Chef at Ma Maison and L’Orangerie in Los Angeles, James Beard Award as a master chef, French Laundry partner, and one of the driving forces behind Creative Culinary Concepts, Inc., and K World Cuisine, Inc.), but he would rather talk at length about how he has taken old world (Burgundian) beliefs and applied them to produce wines with finesse and balance that work in harmony with fine cuisine.

Together with long time friend and business partner, Donald Plumley and their respective spouses, Claude started Soliste in 2005 with the release of a Sonatera Vineyard Pinot Noir. The name Soliste is derived from the special barrel or “soliste” that Burgundian winemakers reserve for their family and friends.

Food and Wine with Michael Chiarello

With a resume that reads like road map to success, it is absolutely no wonder that award winning chef Michael Chiarello has accomplished so much in the world of food and wine in such a relatively short period of time.

Born and raised in California, Michael has known what he wanted to do since early childhood, and has pursued it with both drive and passion. A graduate of the Culinary Institute of America in New York in 1982, Michael then attended hotel school in Florida and immediately began his professional career by opening Toby’s restaurant in Miami to much acclaim.

Michael was named Chef of the Year by Food & Wine magazine in 1985. The following year he was lured back to California to open Tra Vigne restaurant in Napa Valley, where he focused on Italian-influenced wine country cooking and entertaining. He stayed as Executive Chef/partner until 2000, when he left to create NapaStyle and Chiarello Family Vineyards, as well as host several food shows on television. In 2008, Michael donned his chef jacket once more to open his Bottega Napa Valley restaurant in Yountville – again to much acclaim.
